HOW TO USE
We recommend using Zeroglutine®0001 with high hydration (90-110%). it is preferable to make gluten-free dough using a planetary mixer equipped with a leaf.
We recommend a quick handling of the dough, from 2 to 6 hours.
Zeroglutine®0001 is suitable for direct, indirect and mother yeast processing.
PRESERVATION
Cool, dry and ventilated environment.
The conservation conditions of the flour determine its behavior and yield during use. Incorrect storage can compromise the technical potential of the flour ensured by Molino Quaglia. it is essential to keep the product raised from the ground, not resting on the walls and to constantly clean the surrounding area. It is recommended to use the product within 10 days from the opening date, in order to maintain its characteristics unaltered.
