Innovation: “Marias and Clarices” delivers pizza made with beer


Innovation is delivered also in the “Marias e Clarices” pizza. The pizzeria, which opened its doors in Vila Madalena, São Paulo, is betting on pizza made with beer.

In addition to the incredible bet, “Marias e Clarices – BeerPizza”, owned by Ivo Herzog and Henrique Berlinck d’Utra Vaz, delivers the classic Neapolitan style pizza with natural fermentation and fresh and delicious ingredients.

It uses more of one kind of beer, resulting in lighter pizzas, but without losing the flavor of the traditional recipes.

“The idea is to play with people’s imaginations. They can choose the flavor from three types of beer – IPA, Stout and Ale – depending on the beer used, the pizza tones may be light, dark or red. Each one with its aroma, subtlety and soul”, says Ivo, who worked at Ambev for years.

The Menu includes thirteen different pizzas between classic and traditional. The special one carries the name of the house with fig, brie, pancetta and orange honey. The options range from R$ 38 to R$ 58.

Enhancing the technique of making pizza for at least thirty years, Ivo is largely responsible for the secret recipe for tomato sauce, which ensures extra freshness at the time of preparation.
