Raw is an English term with various meanings: unprocessed, untreated, rough, fresh and so on.

I’m looking at a nice landscape, I take a picture, then look at it and compare it with the real thing and check if it’s worth keeping as a memory of a nice moment.

Between the click and the photo there’s a format called RAW. It is used so as not to lose quality when the photo is archived. The electronic data is then reassembled in a faithful reproduction of reality when it needs to be printed.

The camera breaks up what it sees into microscopic fragments. These must then be reassembled into a picture. Hence the quality of the picture will be higher, the more faithful the representation of the real image is in terms of definition, colour, perception of depth and space.

The same applies to good pizza or good food in general.

Raw is an English term with various meanings: unprocessed, untreated, rough, fresh and so on.

This word, so short and easy to pronounce and remember, got stuck in my mind at the end of a long discussion in Dubai on the future of pizza and the pizza of the future, because it’s a sound answer to the demand for a more natural, true, nutritionally incisive daily diet and, at the same time, more transparent when it comes to digestion.

We’re working on the tenth edition of PizzaUp and RAW makes us think about the “relay" from farmer to pizza chef that allows preserving the value of nature as much as possible in a meal.

In the middle, there’s Petra, wheat broken up into microscopic fragments which the pizza chef will then reassemble in the dough without losing anything of the original wheat.

Pizza as a faithful photo of nature: will this be the future of pizza?
