Gaggan Anand’s first pizza, created with Antonio Pappalardo


After the great success of the limited edition pizza created together with chef Riccardo Camanini of Lido 84 in Gardone Riviera for the delivery service of Cascina dei Sapori, Antonio Pappalardo repeats the experience. And he does so superbly...

Indeed, the new pizza was created with Gaggan Anand. With the restaurant bearing his name in Bangkok (closed because of issues with his business partners and then reopened with the same name early in November always in Bangkok), the Indian chef won the 4th place in The World's 50 Best, and was at the top of the Asia’s 50 Best Restaurant for 4 years in a row, between 2015 and 2018, on top of getting two Michelin stars.

«I’ve been at his restaurant in Bangkok 6 years ago and I always admired his idea of cuisine, but unfortunately I haven’t had the chance to meet him in person. So I wrote to him and over the years he always replied, until he made himself available for this project - Antonio Pappalardo explains. - Gaggan loves pizza, so he was very proactive, giving inputs on the ingredients and how to enhance them most. My job was to make his creation feasible, and create a perfect balance between topping and dough».

The limited edition pizza named after Gaggan was available only for one month, between the 15th of June and the 15th of July, only for the clients dining at Cascina dei Sapori, so not for takeaway.

It was round, with potatoes, sweet gorgonzola, fresh chilli pepper, rosemary oil, peaches, anchovies and pine nuts. In the menu, it was presented in Gaggan’s very style, by replacing the name of the ingredients with their emoticons, just like the Indian chef does in his menu.

«On top of being something very important to me as a professional, because he is one of the most influential and revolutionary people in global cuisine, I wanted to present a gift to my most faithful clients, who supported us during the lockdown and came back as soon as we reopened – Pappalardo says. – I thought it was nice to have my clients travel a little, at least metaphorically, given it’s unlikely we will be able to do so in the next few months».

Cascina dei Sapori reopened on the 22nd of May, after making every effort to welcome guests safely. The restaurant will be open throughout the summer, 7 days a week, with both the outdoor and indoor spaces available.

Pappalardo is already working on his new projects, the most important of which is the opening of another pizzeria, right in the centre of Brescia.
