PizzaUp 1 - The pizzeria of the future? Resisting the crisis but facing a revolution

The contemporary pizzeria of the nearest future passes through three necessary steps, three Gordian knots that can alternatively manifest themselves as difficulties or as opportunities, depending on how we approach them...

Namely 1) the search for sustainability between rising costs and sales prices; 2) a different vision of post-pandemic life and a new relationship with the pizzeria's employees; 3) the acquisition of the concept of the pizzaiolo’s social responsibility.

But all these steps actually presuppose a fourth, which is in truth a sort of pre-condition, a fundamental prerequisite for outlining any possible perspective: in fact, it is necessary to realise how the present is characterised by two related and mutually reinforcing elements, that of the economic crisis (which bites, but is by its very nature transient. On the contrary, after a downturn there is usually a natural rebound) and that of a revolution (in particular: digital) which, on the other hand, is substantially irreversible and has unpredictable effects, and may appear less impactful in the common and daily perception of these months, but in reality it is much more so, both because there is no going back in any way, and because - precisely because of this incontrovertibility - it is producing and will continue to produce a strong change of scenario, which it would be foolish, indeed criminal, not to take into account.

'All economic crises kill off the weak players in the market, those who were already struggling before (and this has practically happened since 2020, ed.) and produce risks for everyone else; but you can prepare for a risk, you can somehow calculate it in a business plan. Instead, a revolution produces not risks but uncertainties, i.e. the impossibility of getting a clear picture of the future. It is much worse, because the loss of references forces one to survive on petty sabotage. And we all - in this case I'm talking about the pizza world - want to live and develop, not survive amidst the unknowns'.

These are the words of Sebastiano Barisoni, director of Radio24 and host of Focus Economia on the same station, called for the second year running to "clarify the scenarios" at the now classic symposium of PizzaUp, edition number 17, organised as usual by Petra-Molino Quaglia but for the first time not at the company headquarters in Vighizzolo d'Este (Padua) but on the avant-garde stage of the East End Studios in Via Mecenate 88/A in Milan.
